Quinoa, black beans, cherry tomatoes, cilantro, lime juice, salt, pepper. Tried it out on the kids for lunch with our farm share cilantro a few weeks back and I can't stop thinking about it.
Thanks for visiting! I'm Erinn, and the lunch lady is a blog about my adventures cooking for my three kids, and the kids of the Burlington Children's Space. Food is a big part of our school culture. In fact, making sure everyone has enough good food to eat is kind of our passion. At BCS, we are working hard to feed kids well, model healthy relationships with food and with each other, and get families cooking together. We really love cooking and eating with our community. I cook lunch from scratch for all of our kids every day, including homemade baby food for our littlest eaters. We even bake all of our own bread! If you visit you will find us baking together, making art with our friends, gardening and eating things we grow, investigating our neighborhood, playing outdoors, learning with kids and families about healthy food and, of course, eating amazing lunches. We really, really love lunch.
